Classic Shepherd's Pie recipe

Shepherd's Pie is the perfect meal for winter nights. Layers of savory beef and vegetables are topped with fluffy mashed potatoes and cooked to a golden perfection. The savory and hearty dish pairs well with a rich glass of red wine, and can turn any meal into a memorable moment.

Ingredients:

  • 4 large potatoes, peeled and cube
  • 1 Tbsp butter
  • 1 onion, chopped finely
  • ½ c. shredded cheddar cheese
  • salt and pepper to taste
  • 5 carrots, chopped
  • 1 Tbsp vegetable oil
  • 1 lb lean ground beef
  • 2 Tbsp all-purpose flour
  • 1 Tbsp ketchup
  • ¾ c. beef broth

Directions:

  1. Bring a large pot of salted water to a boil. Add potatoes and cook 15 minutes or until tender but still firm. Drain and mash. Add back to pan and add butter, 1 Tbsp onion, and ¼ c. cheddar cheese. Season with salt and pepper and set aside.

  2. Bring a large pot of salted water to a boil. Ad carrots and cook until tender but still firm. Set aside.

  3. Preheat oven to 375 degrees F.

  4. In large skillet heat oil over medium heat. Add remaining onion and saute until aromatic and tender. Add ground beef and cook until browned, pouring off any excess fat. Stir in flour and cook1 minute.

  5. Add ketchup and beef broth to skillet and bring to a simmer. Simmer 5-10 minutes or until liquid has reduced.

  6. In greased casserole dish or pie dish, spread ground beef in an even layer. Next spread a layer of carrots. Top with mashed potatoes and cheddar cheese.

  7. Bake for 20 minutes or until golden brown. Serve immediately.
